Something Good.

This morning I felt like being domestic so I whipped up a batch of muffins and took them over to the Wright House. Everyone liked them...the proof being the fact there were none left when I left! Here is the recipe:

Breakfast Oatmeal Muffins
1 cup flour
1 cup packed brown sugar
1 tsp baking powder
1 tsp baking soda
1/2 cup oil
2 eggs lightly beaten
1 cup leftover oatmeal
1 cup raisins
1 tsp vanilla (I used Mari's measuring method!)
Although the recipe didn't call for it; I added some cinnamon.

In a large bowl, combine flour, brown sugar, baking powder and baking soda. In another bowl combine oil, eggs, oatmeal, raisins and vanilla. Add to dry ingredients stirring just until moistened. Spoon into greased muffin tins. Bake at 350 for 18 minutes or until muffins test done. Makes 1 dozen.

Unbelievable

There has been a bit of a weather change here in Arizona. The last few mornings have been a little chilly(by AZ standards). I totally enjoy this time of year. Marmalade seems to have a different opinion. She seems to think it is cold...obviously a Native Arizonan! How do I know she is cold? Well, when I open the door in the morning to let her peruse the backyard, she only stays out a few minutes and runs back inside meowing loudly and returns to the bed, couch or her recently acquired chair! After a bit, she ventures back outside only to return a few minutes later. Then she stays in until I go outside....but then she just sits on the porch. I may have to buy a winter coat and some fur-lined slippers for my feline! What do you think of this outfit?


Yard Sale


Last weekend I bought a chair at the bargain price of $5.00 at a yard sale. Marmalade has taken ownership! Judging by her expression she didn't appreciate having her picture taken!

Finally. Two of my favorite camp food recipes. Enjoy!

Pineapple Upside Down Cake


Yellow cake mix
1 can pineapple slices
1/2 cup brown sugar
12 maraschino cherries
2 Tbsp butter


Put 1/2 inch of water in the bottom of the dutch oven. Form an aluminum foil 'pan' that is 1/2 inch above the bottom of the dutch oven and wraps over the top edges of the D.O. This will hold the cake. Use a few layers of foil. Mix cake , following package instructions. Drop small bits of butter into your 'pan'. Sprinkle brown sugar over butter. Lay pineapple slices in, covering the bottom. Place a cherry in the hole of each pineapple slice. Pour cake batter over pineapple. Place on coals and add coals to lid to approximate 350 degrees. Cook until a toothpick inserted into cake comes out clean.

We didn't use coals...just put it in the fire!

Dutch Baby Pancake

1/4 c. butter
4 eggs
1 c. flour
1 c. milk

Put butter in Dutch oven in really hot coals to melt. Meanwhile, beat eggs, then beat in flour and milk. Pour mixture into melted butter. Cook 20-25 minutes or until batter has risen up sides of pan and is golden brown. Cut in wedges and serve with confectioners sugar or preserves. Check after about 10 minutes....it could already be done! It was excellent with butter and brown sugar and very easy to make.

The Camping Trip

I have returned. Took my camera....never even got it out! I did take one picture with my phone but neglected to save it! The weather was great. The food was excellent...everything tastes better outside! The company was good too. I made a Pineapple Upside Down Cake in the dutch oven which was incredibly good. I wish I would have gotten a picture of it. The cake and the dutch oven pancakes (dutch babies) are going onto my list of preferred camping recipes! Marmalade was very cat-like upon my return....I was glad because that means she was well taken care of (I knew she would be) and didn't lack for attention. Of course she could have been aloof because she didn't like the aroma of campfire smoke that permeated me and everything else! I had a great time and can't hardly wait until next year's camping trip!
